You can half do this already by taking a sketch and extruding but the trick is that if it's even a slightly complicated geometry, just selecting the enclosed areas is tedious and a huge pain.

I have produced an app that can create text feature (extrude sketch text) on the surface. Basically, it can place the text on any type of surface, however it is more a code for cylinder face. You can find the source code and usage at https://github.com/AutodeskFusion360/SurfaceText_python
some known issues: 1. Because I did not find a python way to get fonts list of the OS, it requires the user to input the font name manually in this version 2. The code places the text at a default location in the parameter space of the surface, sometimes the first letter will be upside down. You simply tune the start position a little. I have not got time to check the exact reason.

Yes, what is missing in Fusion is the wrap or conform to face aspect. It's possible to work around this limitation if the face is not too far off planar, or if you use multiple sketches, or in some instances by extruding with a draft, but with Fusion's ability to create complex organic shapes this is definitely a missing tool. The more general case of being able to wrap a sketch to a face or faces would be useful.

I seem to always need a new/better dial. Engraving on the outer perimeter of a ring with sequenced numbers (input variables: diameter of the ring surface, sequence: 0 - 100, mark every: 1, number every: 5 for instance) would be very cool, and as far as I can tell, very unique. Mybe that's because it is impossible; I don't know.
Well, I think if you are wanting to emboss on a relatively flat dial, you can do that now, just not entirely within Fusion. Graphics programs like Illustrator have good ability to put text on paths, including circular. Then just converting to SVG and importing as a sketch should give you the ability to make custom dials.
