Definition of Brick Wall from Quantity Takeoff point of view

We can customize the definition of brick wall by adding external & internal plaster having specified thickness as two different layers on the Exterior & Interior side in the family editor. This gets automatically captured in the quantity takeoff schedule.

Can we include the mortar that goes in-between the bricks layers in the horizontal & vertical planes in the definition of the brickwork that will get automatically reflected in the quantity takeoff schedule.

No, not directly.  You could create a Calculated Field which would take the area of the Concrete Block or Bricks and then apply a percentage (Material Area*0.25) for the amount of mortar to be used per metre.
