I have drawn into our model some complex geometry representing paved surfaces from our landscape architect. They are extensively varying in both 2D geometry and their respective levels.
Unfortunately I made the call at the beginning to use the floor family to draw all of these elements. They are currently modeled as 5" concrete floors. For view filtering purposes, I would now like select all of these modeled elements and simply turn them into 6" slab on grade. Can't find an easy way to do this as it crosses between system families.
Any ideas would be great!

There are bow way to convert floors into slabs.
In addition, slabs will not have varying levels using shape edit tools so I thin you will not be able to control the landscape slopes/levels if you used slabs.
If your purpose is filtering, you can rename these floor types with certain name represent that they are slab on grade. or add comment to them or even add a new shared parameter to help you filter them.

Using Floors is a better approach than using Foundation Slabs for landscape paving. Just rename/modify your floor type to 6" paving and use type name for filtering. You can also change the Assembly Code to what is more appropriete and use it for filtering. Example:
