You can't. It's hardcoded not only in Revit but in Autodesk products.
You can't change the mouse button assignment.
I suggest you try the Steering Wheel. I also hate using my mouse middle button because it hurts after working with it for a few hours.
You can activate/deactivate the steering wheel by pressing Shift+W.

You can however assign buttons of your mouse to have shortcuts/macro's/other mouse buttons, outside of Revit.
I for example have a Logitech mouse with 2 extra buttons on the side. In software for the mouse, I have assigned one of the buttons to be the scroll-wheel / middlemouse button and the other to be the key 'ctrl'. So I can just Pan/Orbit with the combination of these 2 buttons without the hussle of using the middle mouse button.
It all comes down to personal preference and a habit of using your mouse, I'm just sharing my setup, since it's not an uncommon setup and this works for me.
