I am using Revit 2015 but have had this issue with other releases as well.

I am creating a floor penetration drawing for plumbing. I need to be able to dimension a vertical section of pipe for location from a grid line. However, I am unable to snap to anything on the pipe. No center (which is preferable), no node on the edge of pipe. Horizontal pipe sections are dimensioning correctly I just can't get a snap on the vertical pipe.

What am I missing?

It sounds like the Rise/Drop symbols are preventing you from selecting a point of the Pipe for the Dimension. You will likely have to temporarily turn off the Pipe Subcategories "Rise" and "Drop" so you can see the actual Pipe.
