Say I want to design the structure of a building, later the structure and finally the systems. Could I just start a default project and perform any kind of modification, or must I start the project as architecture and then start a new structure one linking the previous inside?

For better Coordination, it is recommended to create a split model for every discipline. Then Linking those Models to each other.

It will be a standalone project developed only by myself. My doubt is if it's techcnically possible to do it, or there are limitations on the elements to insert depending on the type of project you choose.

Technically there is no problem, you can draw all the disciplines in one model;however you should have Revit software that contains all discipline (Arch,Str.,and MEP).If you have just Revit Arch you can't draw any mep elements like duct ,pipe,.....
For better management, its recommended to create split model for every discipline.Consequently If you are working alone and you feel its easier for you to work on one model, especially if we are talking about small project;no problem with that, but it will be annoying if you want to send your model per trade for the stakeholders..
