I have been contracted to complete work on another company's Revit model. They model they have shared with me is in Revit 2017 and I am currently working with the Revit 2020 Trial version with the intention to upgrade after the 30 day trial period. Am I able to work on their 2017 model without upgrading it to the point that they will no longer be able to access it in their 2017 version of Revit?

No. You will need to be on same version (and build, preferably) .
...you are kind of in a pickle too. Autodesk Previous Version Rights only goes back to 2018.
