Is there a way to find out which Revit template is used for an old revit model?
No tool will tell in a definite way.
but you can know through some view, parameters or families that you know that is loaded in a specific template.

You can select a family object and click on edit. In the Family Editor : Create> Properties > Family Category and Parameters - you can see here family category (that was used as family template)

That's a toughie, especially as templates are dynamic beings which are updated and modified with time.
To check if it is an Architecture or Structural template - look at the Project Browser. If you see Architecture at the top of the browser, the Architecture template was used. If you see Structure at the top of the Project Browser, then the Structural template was used.
For future reference - create (or ask the Powers-that-be to do so) a Startup Page family, which shows the software version and the last date that modifications were made. Keeping that date current would be the responsibility of your BIM coordinator.
