Use Create Sketch option, defining the boundaries, risers and stair path

You can also first model the stair and then convert it to a sketch based.

I don't know what you mean by "irregular stair", but Component Stairs can manipulated using their Shape Handles.  Is this what you are trying to do?

For that kind of gallery seating/stair I'd be inclined to use Model in-place and create the extrusions in section and then extend them as far as they would go in plan. You could also use a stair the left lower run and another stair for the left upper run. Then use Floors for the other seating and "floors/landings" required. The stairs and floors will not "join" up nicely and look monolithic so that's why I'd be inclined to go with "in-place" modelling. That would allow all the elements to look as if it was built "together".

Edit: I think you could accomplish it with the stair tool using sketch mode and multiple runs with different riser counts and height offset. Might be "easier" in-place though.

I've tried making stairs with sketches several times, but all of them have failed. I'll keep that in mind when I work !

I didn't know I could fix it with a sketch after drawing! Thank you.
