Can you edit the wall type assembly and assign the finish materials to the finish layers? Or am I missing something?

@Anonymous: Why not just change the wall type? If you want the material to have a thickness, then it interact better with others walls (i.e. joining, etc.) if it's defined as a layer within the wall type. But, maybe I'm missing something too.
Several methods/options:
-Paint
-Build as layer into compound wall structure
-Create a separate, thin wall, then join geometry to the main "core" wall, so openings will automatically cut.
-Use Parts; Divide and apply different materials in a wall surface
