What you are referring to is not a room tag, but the room itself. So when that room is placed it disappears from the list.
If you have multiple rooms of the same type, you will need to create multiple rooms of that type.
You could create multiple rooms of the same type in your template and delete the ones you do not need or create them in the project

If I create multiple rooms with the same name will their areas add together within the schedule?
The areas I work with are departments within shops so have been using room separators to create the areas, is this the best way of creating department boundaries, I am new to revit so still finding my feet.
Use the "Department" parameter, of the Room Category.
For example:-
Room 1: Name=Till A, Department=Tills
Room 2: Name=Till B, Department=Tills
So the Department value can be the same across a number of Rooms- but the Room name must be unique.

A little late to the party, but there is no need for Room Names to be unique, if you do not want them to be so. And you can sort a Room Schedule by the Name parameter, uncheck the Itemize every instance parameter toggle on the Sorting/Grouping tab and, on the Formatting tab, set the Area parameter to Calculate totals to see the total area of all of the Rooms of the same name.
