What would be a reliable method to get a current project that is running under the old template into the new updated template?

open a new project with the updated template.
open the current project with the old template
in your current project transfer project standards (selectively) from the new project to the current project
I do what @kadmonkee has mentioned with just one additional step. I first transfer the category of elements to an empty template and purge out what I don't need from that category, then I transfer to the actual project. Reason being, I often don't want ALL the linestyles or text styles etc, so this additional step allows me to bring in only what I need. Project parameters or materials is another example.
I did try to Bind the old project to a new virgin project. Am I right to have been scared to death?
as long as you are migrating sequentially you should be ok.
try to avoid skipping versions
only transfer what you need and do this in small steps (more Time consuming).
this will allow you to recognize any issues as they appear.
