I am attaching a flat room on the top of a commercial building, with isolation and a metal deck above the existing joists and beams (the existing joists and beams already have been drawn).
The issue is, the joists and beams all slope to the drains, so the planes are not flat. Since the metal deck flute directions vary with the direction of the joists, I assume that the roof probably have to be added (in pieces) on each of the squares so the metal deck direction symbol could be added to each of the squares on the roofs.
What is the way to add the roofs so each also has, i.e,, so each follows, the same slopes of the joists and beams below?

The roof command do not has the "pick support" icon on the "Draw" section. It has Pick walls, but we are talking here about "picking supports".
If the "pick supports" will work for the roof, like you say, how do I add that symbol to the draw panel? (I can add it besides the picking wall symbol).

Sorry. Pick support is only available for Structural Floor. Can you use that instead of Roof? If not, you can draw flat roof, modify subelements and raise points to match the correct elevations.
