When I select ''Tag by category'' and select the first wall to tag, It opens the Modify tab for this wall tag instead of letting me tag the other walls as well. Please see the screenshot below. Can you please advice?

When the command is active notice that the Add/Remove Host button is "on" in your image. That means you can click on additional walls to include in the tag reference. You need to make sure you're selecting walls of the same type to avoid seeing <varies>.
Click Add/Remove Host, turn it "off", to add a tag to a single wall at a time instead.

Thank you for your response. I understand this but this is not what I want. I want to be able to tag multiple types of walls not the same type though.

It used to let me do it to different walls with different types and with different tags. Something wrong happened and it doesn't let me anymore.
I don't recall it working differently in previous versions? Did it work differently for you in Revit 2024 or earlier?

In all. I've just finally gotten it. after each wall/object you tag, click skip one time and you will be able to tag multiple objects. Thanks again for your time.
I was misunderstanding you. I can tag multiple walls of one type and then move to a different wall type...noting the status bar tool tip "click empty space or press ESC to finish". That way I can just start tagging other walls. Click in empty space tells Revit I'm done with the current selection process while the Add/Remove Host button is "on".
