Is it no longer possible to convert an assembled stair to sketch mode so that you can lengthen the stringers?

I just check in 2019, 2020, 2022 ...the option to Convert assembled stairs to sketch is still there!
Edit stair >>> Select Either the run OR landing and convert to sketch (selecting both will not show the convert button) ... or is it something else you meant?

Yes, I've gotten that far, but cannot select the stringers to be able to extend them past the last treads.
Stringers follow run or landing...I don't think they ever had grips allows them to be extended past the stairs (sketch or no sketch...they have only the extensions available in the properties palette.
Model the stairs without them and do the stringers as extrusions maybe

Version 2017 had grips that would let you drag the stringers so that they extended as shown in the jpgs below. Why not 2021?
Interesting to see that! 2015 and 2017 are the only 2 versions of Revit which I have never used...I did check this morning in 2014/16/18/19/20/22 ....Stringers are bound to the Tread/Nose...not the stair boundary line of the Assembled Stair shown in your image
To achieve that 2" extension we have always done it using one of the following methods:
Option A: Model the stairs without the stringers and use the following to substitute the latter (I think this is pretty much easy no images are required):
Option 2: Sketched Stair + uncheck Begin with Riser (See image 1 Below)
Option 3: Use custom Treads and Risers (See image 2 Below)
