Is there a way to change the thickness of the plywood on the stair landing only without making the landing a floor? Our stair treads are typically 1" and the landings are 5/8" plywood.
Yes, there is an option to change the thickness on the landing if you use the automatic stair tool, but I usually like to sketch my stairs. It works much better. There is not option to change the landing plywood when sketching the stair.

So the landing are not part of the run? You mean you're Landing are Floors? Or, actual Landings. Either way, the answer is yes. If landing, do it as I showed in my screenshot. If Floor, model the layer thicknesses as you normally would. The riser height will not be affected.
