Is there a way to have the stringer/side support to follow the profile of the stairs, and also extend down? (There is a gap between the stringer and the stairs) I've seen the suggestions to create RP's to snap walls to, and this worked for the 3-step stairs, but is there an easier way to enclose the sides, like in the stadium seating photo?

I don't understand your question, but the stairs shown in the photo could easily be replicated in Revit using Monolithic Stairs.
Do you mean something like this?
