From a Facility Manager side, if I need to share model information with a consultant and do not want to give them the entire model due to security concerns, is there a way to clip and share portions of the model without giving up the entire building layout?

Group the portion and then right-click on the Group Name in the Project Browser and select "Save Group" in the drop-down menu.
Another option would be to Save-As the model, and then delete all the information/items you do not want.
Then send the consultants the "specific-elements only" Revit model.
In your project browser, while holding ctrl key, select multiple views you want to share, right click and pick ‘save to new file’.
If you want to include 3D model, create a new sheet. Insert the views you want to share along with the default 3D view. Right click on the sheet name and pick ‘save to new file’.
In both cases, you will get a very basic file, stripped from all proprietary information, views, families, etc. and you can also delete part of the model you don’t want to share.
You could give shared views a try (rvt 2021)...
