The entire second floor of my building is showing up as asphalt shingles. It is not only the walls, the railings on the floor's balconies and the chairs in the floor are also asphalt shingles. How do I fix this? I have tried changing the wall structure, changing the wall types and creating new walls. It still shows up as asphalt shingles. However, when I go into the elevation views, it shows as the proper wall elements I have set it to. In camera views, 3D views and renderings, it is only asphalt shingles. Help!

It's coming from the Material assigned to the geometry. Sounds like all the geometry is sharing the same Graphic Patterns and/or Appearance Images, depending on the Views' Visual Style Settings. If you have assigned no Materials, then the geometry is likely using BY CATEGORY Materials defined under Object Styles. Check your "Default" Materials first (i.e. "Default", "Default Wall", "Default Roof", etc.). I'll bet one of more of those have Asphalt Pattern assigned to them.
BTW: Something just occurred to me. By "Asphalt" are you referring to the color, not pattern? The default color for geometry is Gray. I guess one could say it's "Asphalt colored".
I was buying into your Underlay theory, until I re-read this sentence in the original post:
