While placing the schedule with header data on the sheet, it does not match the original schedule's column size, and the text in the cells is cut off
The editing view of a schedule is not 1:1 representation of the schedule on a sheet. The font display takes over when viewed on a sheet so your columns will always need to be adjusted on a sheet view as the priority. You can adjust cell width with actual dimension input while editing the schedule. I typically adjust a schedule on a sheet and then fine tune the column width in the editing view to clean up the final schedule size...if such effort is required by the sheet's layout.

Making manual adjustments is not feasible, as I need to achieve the same result by using the Revit API to automate the process
You'll have to work out some sort of ratio to know how much wider a column needs to be to support the font size you use for the schedule's Title/Header/Body and the number of characters you think is acceptable to fit in a column before it begins to wrap information.
