How do you make one roof cut away another roof?

A screen capture of the roofs you're working with would help. You can edit the sketch of one or both roofs to remove the portion that is not required or redundant. Using Join Geometry on the the roofs will help provide a joint you can select to help guide the editing process. You could also use one of the Opening tools to alter one or both of the roofs.

You can use Roof Join tool to extend or trim one roof by another roof.
