I work for an MEP firm and we are about to start a new project using Revit 2017 and Collab for Revit 2017. We are wondering if it is necessary to install ALL of the Revit updates. In other words, if we don't install "Revit Civil Structures Enhancements" will this affect our work as MEP designers/engineers and our ability to communicate using Collab for Revit and a cloud based model. Will the architect, struct. engr., civil engr, and MEP engr. still see the same drawings if we don't all have the same updates?

As long as the release year is the same, everyone should have no trouble with the model. Intermediate feature updates and extensions/add-ons only change/add tools or their behaviors, and thus what you can do while working in the project, but don't actually change the project file format or anything.
As long as you are all using Revit 2017, or Revit 2014, or whatever, you should be fine.
