I find Revit Text to be a bit of a pain.
It's very slow- even on an extremely powerful machine I have to click, pause, then write.
I'm writing wall specs and I was wondering what best practices were.
When I write and make changes, it often seems like the text has a mind of it's own.
For instance, if I change the scale of the text, everything misaligns - how could i avoid this issue?

Sorry to hear that you are having issues with text.
Can you share a screencast of what you are experiencing?
Which version of Revit are you using? Can you confirm if you have the latest update installed for your Revit version?
Regarding specs, you can do keynote function with a legend - let's hear from the forum for more ideas.
There are a few third-party plugins that do this job as well. (e-specs, NBS to name a few)*
