Is there a way to reset grid numbers when you have made a mistake? or do i have to manually change each grid number one by one?

First open the template then follow these steps:
1. Draw a grid;
2. Change the name to "0";
3. Delete the grid;
4. Save the Template.
Next time you open the template, the first grid will start from "1".
I haven't tried it, but there is a dynamo script on #4 to set the grid line numbers.
Or lets say you draw some grids (1,...,6) and for some reason removed the grids (2,3 & 5). The result would be the grids (1,4 & 6). In this case you may use the Dynamo to re order this grids to (1,2 & 3) for you:
This worked in Revit 2022 and deletes all Grids so that you can start again,
Create a new grid
Select the newly created grid with a right click then use left click to open drop down menu
click "Select all instances - In Entire Project"
Hit delete
Grids created after this start at 01 and you can rename them without the error message "The name entered is already in use. Enter a unique name."
