I would simply like to extract a list of all materials in use in a project. I have found no other way except to open the materials from the Manage Tab and filter by "in use" and then take a screenshot, scroll down, take another screenshot, etc, etc, See attached. I know there must be an easier way, right?

Check your Phase and perhaps, Sorting/Grouping.

Not sure about this. But it might be that "in use" in the material browser means all materials used in all the families, that is in the project itself and in the family browser. While the schedule will only look at the materials used in the project

They are right, material takeoff parameters must be the solution.
First of all, when you create your material takeoff, did you pick <multi-category> in order to list everything?
Otherwise, first check that you have selected a category that contains several materials!
Check as well that as a filed, you picked "Material:something (ie name)", you need to get the property from the object material... Did the mistake once or twice!
Check that you have no filter / that it doesn't just filter one material...
Then it will list only the materials quantity / names that are usefull for your project, ie in use...
Finally if you are working with many links, check that the "include elements in links option is checked in the takeoff fields tab (at the bottom right)!
