Overriding Symbolic Lines

I'm sure there are more legitimate methodologies for executing structural plans, but I'd like to see if this "architect's version" of it is possible.

 

I've got a number of window families with fills and symbolic lines when viewed in plan. Is there anyway to override symbolic lines and fills in plan view. See attached image for what I am currently dealing with.

You've already shown me where linework overrides are. Very helpful, however, I'm still a bit confused. The family has a number of line types that do not show up in the project. How can I override these?

Nevermind. I see that line types can be distributed across a number of categories. Thanks again for your help. Things seem to be working now.
