Is there any way to overwrite the detail callout to not show the sheet number but to show blank or (-)? I'm trying to match the standards of another company we are doing drawings for and when a detail is shown on the same page as the parent view then their standard is to not show the sheet number in the detail callout.

Contrarian in me... I'd suggest showing the current drawing number is less ambiguous than a dash. A dash can mean oops we forgot to fill this out/put this on a sheet.

I concur.
We had the same standards in CAD - a dash for sheet number where the detail and the parent are on the same sheet. The predecessor had to create two call-out types, one with dash and one with the actual sheet number. It had been more troubled than worth especially when details moved from one sheet to another.
When I took over the BIM manager role we have decided to abandon that standard and go with always showing sheet number.
open the call out head anno family. Click the label Sheet number and uncheck visible in the properties
