Why does it automatically select RGB 209 209 209 when i check the box for Shading to Use Render Appearance?
I would expect it to shade to match the color of the asset in use (red).
Using Revit 2022.1.X - Remove image and colors will be consistent

Can you show the full Appearance window of the material? As far as I know, changing the Generic color where there is a texture image does not have any appearance effect, you need to change the Tint color. And when you have a texture image and you check Use Render Appearance box under Graphics > Shading, Revit actually matches the shading color with the image's base color (don't ask me how it can determine which color is the base color of an image).

Get your priorities for the overall drawings.
I would say
1. Shaded or consistent colour are important for most of the view. fix that for all the materials.
2. Render colour is hardly used and to get this right, you will end up fixing all the materials. and in render you are getting this right anyways. Idea is to fix the material for consistent view cause then you can use solid or hatch as well as background colour as solid or background hatch.
