To start,
I imported furniture families from Sketchup by editing the file in sketchup to remove any textures and created layers. I exported the Sketchup file to a 3D DWG (Cad file) and created a new family then imported the DWG file as a family. Using Object styles in the family editor, I was able to edit the materials of the family to match what I desired. This worked the first time, However, when I changed my mind about the materials I selected and went to change them (the same way I edited them originally via Object styles) the materials change in the edited screen, but when I import the family into the model, it asks to update and override the original version, I select that option, but when I go into the 3d view, the old materials are still showing.
I've tried to start over by deleting the family from the Project browser and reimporting the original DWG in and editing the materials, but as soon as I import it, the materials revert back to the original materials I applied when I first imported the family.
Can this be helped or is this a glitch?

No this is not a glitch. This is designed this way. The materials in the project have preference over the imported materials.
So the first time you import a material it shows as imported. When you re-import the model with a modified material (with the same name) Revit will keep the original material.
You have few options. Go to the material browser and modify the material in your project. Or delete the material from the material browser and reimport the family with the modified material.
