I am drawing a coffee shop with exterior seating. The roofs are supported by wood columns. At the base of the columns there is a 4' tall concrete pedestal with an ashlar veneer. This pedestal tapers from 2 ft square at the base to 15" square at the top. I modeled this using a blend. Pretty simple. However, when I add an ashlar material to it, the direction of the material changes on each side. How do I correct this?

I usually create a "rotated" version of my primary material with the image map rotated 90 degrees that I can paint on as needed.

Model Pattern? How about just rotating the surface pattern on those faces? If it's a Model Pattern, you can tab select line elements in the Model Pattern. Select one and then use Rotate Tool to rotate it 90 degrees - or whatever.
Ah, Realistic! That won't work. You need another material with a rotated image.
I made this as a column base family. The material is one of the parameters. It is drawn as a flex blend shape. If I make the top & base dimensions the same, the ashlar pattern maps correctly (parallel to the deck). But if I change the top of the blend to a dimension different from the base, then on two sides of the blend, the ashlar pattern is parallel to the deck; on the other two sides the ashlar pattern is perpendicular to the deck.
The image applied is the "Limestone - Ashlar Coursed" from the Revit 2019 material browser.
I added a small rectangular void at the base of my mockup family, fixes the orientation.
