I'd like to know how can I reset my material by category or how to change it. for example in my case I've got this problem with floors. "Slab"

There are 2 ways to set a material for a floorlayer: By Category or by chossing a material.
The "By Category" materials are defined in the Object Styles window. (Manage > Object Styles)
In your case, go to the Floors Category in the Object Styles and set a material.
This will be the default material for a floorlayer when none has been defines within the Floor Type.
If I understand correctly, you want to change the material back to "by category"? When assigning a material, in the material browser, lower left there is an icon to assign By Category...or simply type in the material parameter <By Category>
Not exactly, I have created a material and now that material is the material by Original, I don't know why.
I'd like to remove that material from " Material By Original" and I'd like to know how reset or create a new "Material By Original".

Go to Manage > Object styles. There you can assign your material by category, or delete it (second yellow marking)

EDIT: Nevermind, I thought the previous post was from OP.
When you click on the "By Category" icon in the left-bottom corner of the Material Browser, the Material Browser should close and next to "Baignoire" it should say <By Category>
Next to the Plumbing Fixtures, in the Object Styles, there's still a material assigned.
I'm assuming the family, of which you're trying to change the material, is in the Plumbing Fixtures category.
I think that we're talking about different things "all of you talk about "materials by category" and I'm talking about materials "by original", anyway many thanks for all your messages

OK, we will all see what you want to achieve there.
We are talking about PARTS.
Material by original means that the PART you have created keeps the same material as the "original part" from your object (create a part from a stone cladding and "by original" will keep the material stone cladding.
In order to change your "by original material" you need to change the material of your ORIGINAL OBJECT, before the PARTS

The "by original" option works as following:
Take a wall.
Create parts from the external layer.
"by original" will allow you to keep the material defined in your wall structure YOUR PART KEEPS THAT MATERIAL.
Untick "by original" and you can select a different material that APPLIES ONLY TO THAT PART.
It is an option that applies only to the specific part and has no other link to anything else.
You can schedule it and play with it but that is all.

Thanks for your help, It was all about the original floor, and I forgot to say that I was working with a part. Thanks to all of you for your valuable help.
Your subcategory "Slab edges" still has a material assigned to it. So if there's no material assigned to the type of Slabe Edge you've created(<By Category>), it will be assigned the material you see in the Object Styles. Assign a material in the type properties of your Slab Edge to override this.
If you want to change a material in your floor structure, you do this by editing the Structure in the Type Properties of that floor.
To me, using Parts isn't ideal in your case as it only edits one instance and makas your model more complex.
