I see this topic posted many times decades ago and people just saying to add text next to section and callout tags for TYP SIM OPP. There has to be a better way now right? How can I have a simple text box near my tags that I can write anything in for each instance of the tag?

It sounds like you are coming from AutoCAD or something similar. Sure you could add a lable to the tag and have it behave like an attribute and type the value into it but it is easily solved with 3 tag types. Simply select the type that you want.

Why are you opposed to just adding the text notation? What are you wanting to improve upon? Doesn't sound systematic if you want to be able to "write anything".
I just duplicated the callout to make 3 kinds, but if I change one callout all the other callouts change too...
so I can universally change all SIM tags to OPP by changing one instance

That's done via Type Parameter. There is no Instance Parameters. I thought you wanted to have different notations per Instance.
