I want to show my cuts in model walls and columns in plan view (hidden line view)

If it is possible to do it in VG what do I change ?

You mean in Hidden Visual Style?

Set the View Detail Level to Coarse  and set a Coarse Scale Fill Color/Pattern under the Properties of the Columns and Walls.

Do it in the view template so that you can set it for multiple views without having to set them all up individually. And better yet, set up a project template with this in place so you never have to do it again.

In the view template, go to Model Categories. Go to the columns, walls, and anything else you'd want to fill, click in the "Cut" - "Patterns" column. Set the background to Solid Fill, and then whatever color you want.

This is not done in the properties of the wall unless as @Anonymous said you set the coarse fill of the wall and change the view detail level to coarse, otherwise it is done in the Visibility/Graphic Overrides for the view, then scroll down to walls at the bottom. You could also override the detail level for walls to show at coarse scale and it will use the wall coarse override.

For columns you will need to use the VG settings for the cut pattern.

Join the Column to the Wall with the Coarse Fill Pattern/Color.

You're dealing with a Structural Column - you can't set a Coarse fill pattern for them.  So you could use visibility settings:

Which is view-dependent. If want to set the fill pattern project-wide, you could modify the Object Style:
