Is there a way to hide sweeps create in a wall assembly in plan view? It seems like there should be an option for it under Visibility settings but I can't find it.

I have that option too, but it only lets me hid a wall sweep that I create independently. If I create a sweep inside a wall assembly (like my crown and base molding), there's no option to hide those in the visibility settings.

You can create parts from walls, select the sweeps and exclude parts, set the view to show parts.
My office came up with a creative solution when the sweep is baked into the wall type and it reads like double layer gypsum. Simply override Wall projection lines in the view template to be white (or even light grey). The cut lines remain black. The assembly reads cleaner but you still have the advantage of the sweep showing up in elevation.
A second less preferred option; is to adjust the cut plan above the sweep, however floors won't appear this way.
The white lines override works visually but be careful where you're dimensioning to. It'll still pick up that sweep.

I was having this same issue - had a wall cap modelled as an integrated sweep in a wall well into our project. This is great for ensuring consistency and keeping things a little cleaner, but this basic profile was in the way in my wall sections.

I simply clicked my wall in my section view and clicked the parts command. I was able to select the roof cap and exclude it from my section view, while it remains in all other views... much better than using invisible or white linework.

I consider myself a bit of a Revit wiz - but I had no idea about this function and it's amazing.

Is still on my wish list for Revit future- just make them a sub-category under walls. Then work arounds are not necessary.
I came up with a pretty good workaround that doesn't necessarily involve adding sweeps to your wall structure but utilizing the "split region" and "assign layers" buttons. This answers not seeing the sweeps in plan view, while also allowing you to see the base profile in elevation.
To do this:
1)Click edit structure of your wall: Add Finish layers for the base on both sides of your finish and set them to 0". In this case I made a material for the wall base and applied it.
2)Set your preview to section to activate the modify vertical wall structure buttons.
3)Click the "Split Region" button and hover the outside edge until you get to the designated height (4" in this example) and click. You can use the modify button after to adjust this cut.
4)Do the same thing for the other side of your wall.
5)Highlight the Wall base layer in the table so that the row1 turns black.
6)Click Assign Layer, then click inside the 4" region on the left side that you created.
7)Highlight the Wall base layer in the table so that row 7 turns black.
8)Click Assign layer, then click inside the region on the right side that you created.
Voila, you now have added a base layer within the same gwb layer. You're welcome.
