I have a roof with two gables, one small and one large....see attached in plan view.
I created the roof by footprint and that was easy enough.
Now I would like a portion of the smaller gable roof to extend to the exterior wall (shown red dashed line)
I am not sure how to achieve this so the 3d model looks correct.
I would also like to know how others would create this wall closure above the lower roof.
At the moment I have a portion of exterior wall with the bottom offset so it does not show in plan view and the top connected
to the roof element.

You mean something like the below? If so, see if you can reverse engineer the Revit file attached (v.2017).

Is there a way to join 2 roof objects ? (if that is necessary)
They are already joined using the Join Geometry tool. Still two pieces when you select them but no visible separation lines.
P/S: I bet some roof experts can make it a one-piece. I hardly ever model roofs so that is the only thing I can come up with.

This can be done with one roof footprint. The trick is to use the join roof tool once you get the basic foot print to join the back edge of the smaller gable to the facing wall. The join roof tool will join a roof to a wall for this exact use case. You don't have to just join to another roof.

Is there an easy way to trim the wall under the lower gable roof?
I placed a section just in front of the wall, then in elevation cut a piece out....maybe there is a better way to do this?
I drew the wall to the full length and used edit profile to trim off the section below the underside of the lower roof. The top is still attached to the underside of the upper roof.
