I'm trying to add the FR30S/FR60s etc fire designations to the new wall types in my project, but the drop down list is empty. How do I add these fields to my wall type?
I want to be able to select the wall, select the fire designation, and for it to add the blue or red colour for my fire plan.

You can type it in. The drop down list becomes populated as you add different options. To colour the walls according to the designation, you can apply a filter based on the rating.
Go to your VG settings - Filters.
Go to Edit/New to create a new filter, Create a new filter and give it a name, such as 30min fire rated.
Select walls under categories.
Create a rule that Fire Rating equals 30. Click OK.
Under you filters, Add the filter that you have just created. Override the Cut Pattern to be the colour that you would like for your fire plan.
I don't have a filters tab, just the first three. Is that an LT vs full option?
I've only ever used the full version, so I don't know what LT can do - it may be so. If so, you can override the graphics in the view. You can pick one type of wall and type 'SA' to select all walls of that type and override the graphics in the fire plan.
Revit LT do not have Filters. Instead of give the Fire designations to each instance of the walls, you could create different Wall types and give the designation to the Type properties. Then you can edit the Coarse scale cut pattern for each type and give it an unique color.
