A client has requested the 3D Revit model to navigate it, but I have loaded families that I do not want to share with them. Is there a way to export the .rvt file to another 3D extension that will not include the loaded families, but he can still load it in revit?

in my opinion, the best way to do it will be to use Autodesk BIM 360 (Autodesk Docs) or any other 3D Model viewer that is able to manage views and Revit parameters.
For instance: upload the Revit file into Autodesk Docs, and the invited stakeholders can navigate into the model and extract non graphical information from it, without to download (if you choose not to allow this by a restricted access)

You can send them a Navisworks NWD file. they can load that into Revit as a Coordination Model and shouldn't have access to your individual families.
