How to start/complete an Energy model (i.e., U-Value, etc.) for our MEP Consultants' calculations?

Why would you need to do that?  Wouldn't that be the MEP Consultant's responsivity? Besides that, asking how to "start/complete an Energy Model" is hardly a question that can be answered in a typical forum-length reply and nor can it be answered without a greater back and forth discussion.

The MEP Engineer wants to start sizing equipment based on U-factors of walls, fenestration, roofs, floors, etc. which we (Architects) should be able to generate relatively fast...based on the software application.

Such information come from your building model, schedules, and specifications, NOT from an energy model.  I think you misunderstood what a Revit energy model is and what it is for.
