Is it possible to have a door recessed into two different wall thickness?
Wall 1: 240mm brick with studs wall
Wall 2: 90mm Stud wall with Weatherboard.

Sure. Join the walls. The Opening will penetrate both.
edit...I just looked at you picture and I'm not sure I'm understanding your question. Are you talking about the door trim? Is that trim part of the Door Family?
Yes.
The Door Trim is part of the family; which is flush with the lower brick wall but not with the weatherboard wall.

FWIW: Example attached. Replaced Opening for Void and added unattached Void to Cut Wainscot in Project. "Cuts with Void when Loaded" checked in Family.

Thanks for the door download, but the void doesn't cut the lower wall brick work. I'm only using Revit Lt.
You need to use the Cut Geometry tool on the Modify Tab to do that cut in the Project.
...press "Cut" and then pick the wainscot wall and then the door.
Is the Brick Wainscot a separate Wall Type or is it built into one Wall Type?
The door is cut into the weatherboard wall. but the two walls are separate.
