Is it possible to dimension to the inside corner of angled walls like shown below without having to add reference lines? I cannot seem to snap to either endpoints or intersections.

You can do it, but it takes finesse. If you press the tab at the that inside corner, it'll cycle to a very small green dot. That's the point to select. Begin dimension from the corner return and find the inside corner point last.
If Revit refuses to cooperate, then lay down a Ref. Plane at that inside corner and dimension from the corner return to that Ref. Plane.
This will help too: disallow automatic joining, dimension, and use Join Geometry tool to hide the visible edges where the wall intersect.

Can you explain what you mean by "corner return", or screenshot one?
Thank you for posting about the tiny green dot. I wonder how many years I could've gone without ever noticing that thing. So tiny.
I got it. You cut the corner of the wall with a longer corner than you want. To dimension it you grab the tiny green dots on the outside cut. Once the angled dimension is in place you grab its handles and drag them to the inside cut's tiny green dots. Now you can resize the cut of the wall however you need it (if you try to go too small the outside corner won't automatically change to a right angle, so you'll have to play with wall thickness or some other trick).
I usually just use reference planes nowadays like @barthbradley suggested above.
