What is the best way to detail a component (in a 3 view drawings perhaps, plan, section and elevations) that is separate from where the component has been placed in the model?  For example, a special piece of casework in an apartment building Kitchen that needs to be approved by the client before the Kitchen layouts are finalized.  I have been able to use the Legend tool for casework but I only get plan and elevations.  Is it possible to get other views like sections in the Legend routine?  Is there another way that I should be approaching this? There is nothing worse than detailing an in place family and organizing a couple of beautiflly anotated views on a sheet only to move the family later as the project evolves and have to find and move all the annotation to the new location!  Hmmm?  Did I miss this class 15 years ago?

Why don't you create a "sandbox" phase that starts before the actual Construction Phases begin and copy the Model elements that  you want to base your detailing on to this Phase and demolish all the copied element's before the first Construction Phase begins.  That's a method we use. That's how we do Curtain Wall Legends.
