Seems like a simple enough solution but I cannot get the shading for the floor and Structural framing beam to be the same weight
Any ideas would be appreciated.

Both cut and projection lines in Demolished are set to the same weight ?
Set the Floors category's cut pattern to solid white instead of invisible.

Thank you for the solution however i don't understand why this setting shouldn't also apply to structural framing however it works with the fill hidden for that element ?
Although it seems to solve the issue it isn't ideal when using a black blackground for drafting in Revit. (see screenshot)
Do you have any other ideas on why this is happening ?

No I don't. If you don't want to use the solid while cut pattern for the walls then create parts from the walls and set the view to show parts.
I understand why. It's all about Hierarchy. Your View Template Category Overrides are "fighting" Phase Filter Graphic Overrides. You can do away with VT Category Overrides and just use a Selection Set Filter to get to where you want to go.
