this is probably obvious to many, but I wonder how I can delete already tagged rooms, and start all over again? I will room tag all my 3 floors in the house, but only get to tag the 1st and 2nd floor ..

If it is the TAGS you want to delete:
Select one in a View >> Right Click >> Select all Instances "in Entire Project" and delete
If it is the rooms you want to delete:
Create/use a Room Schedule >> select rows and delete

Rooms are like components. They're there, holding the parameters and carrying the information you assign, but they're still objects on their own.
To appear in plans and etc, you use Room Tags. Deleting Room Tags you won't delete Rooms, as Rooms are separated things.
You can delete rooms from your model, but they won't be permanently deleted, just move to some sort of Revit limbo. To permanently delete rooms, you must create a Room Schedule and delete each desired entry at the schedule.
There are a few articles about rooms at Knowledge Network and I strongly advise you to take a quick look at them.

Tags are View-Specific Elements. Just Window-Select, uncheck everything but Room Tags in the Filter, and press Delete. Next time you place a Room, deselect "Tag on Placement". This will remain the default until manually activated again.
Thank you so much! But now I have problems with only one room left for room tag with area.. For some reason I can not tag this room at all .. I got door and no need for room seperator..
"Room tag for Area". No can do. If you mean Room Tag for Room, raise the Upper Limit of the Room so it intersects Cut Plane of View.

and another thing, when I for example make color legend for the different floors, for example the 2nd floor, it picks up the rooms on the lower floor together with the 2nd floor .. on this 2nd floor I only got in total of 4 rooms to be color legend..
You are tagging it, it is just not visible... Go to section view >> Enable Room Reference and

Sounds like you have overlapping rooms. Check your Rooms Upper Limits and make sure they aren't overlapping another. Also, check your Warnings. They will be listed if that is the case.

There is no Room in that area. You need to place a Room first.
Check the workset which the Room is assigned to....the workset might be not visible in view. In such case the room will be tag-able but tag not visible => generating the same prompt shown in the screenshot you posted
