I have 2 curtain wall doors that aren't showing up in my plan view. I checked the cut plane of the plan to make sure it cuts through the doors, and I have some other curtain wall doors in the same plan that are visible in the plan view. The doors, floors, and walls were all created in the same phase.

... you can try to create a plan region view for those specifics curtain walls

... can you upload a picture of the 3d view of those curtain walls....
... to take a look to see what's happening..
... maybe they are in a different plane
... or they are hidden in visibilty/graphics

As you can see in this screenshot, the beginning of the door swing is visible next to the curtain wall mullion on the left. I have a feeling the floor is somehow blocking the door, but I don't know why because I checked multiple times to see if the floor height and the door height are the same (and they are).

I can't clearly see the condition you are speaking of regarding the Door Swing, but those are typically Symbolic Lines, meaning they shouldn't be obscured by any model element. If they are Model Lines in the family, then Convert them to 2D lines.
...You could have a Masking Region conflicting too. See this link for an explanation.
...forgot to mention in my earlier post: also check "When Cut in Plan/RCP" in Visibility Settings.
1. Try changing the Cut plane and View extents.
2. also try changing view to Fine, Coarse...
You might be cutting through the horizontal mullion and missing the door,
so adjust the cut plane little lower or upper to capture the door..
3. The curtain door family might be a problem, the 3d elements visibility in ( Coarse, medium, fine ) .

I had the same problem
The stairs and the run were higher than the bottom of the curtain door.
Once you make the bottom of the door higher or equal to the run it will appear in the floor plan
Hi i had same problem too.
And that happened cuz when curtain wall's base point is lower than the associated level
