I might be easiest to create separate roofs, like a roof might be over-framed in the field. Once you have the roof you can use Join Geometry to clean up the appearance. In other cases Shape Editing might work better than the Defines Slope concept with roof sketches.
A plan view of what you want to do would help narrow it down.

I think I could do as a monolithic using Offset from Roof Base, but I'll ditto @SteveKStafford; the simplest solution (with less math) might be to model each different plate height roof independently and then join them all together. However, that my prove to be a challenge too with variable height heels. You may still need to use Offset From Roof Base. If you can manage a monolithic, the underside will be much cleaner.
If you want to post the file, I'll take a quick stab at it. Need those heel heights as well as plates though.
Thanks - plate heights are TO High Ceiling and TO Low Ceiling. Heel heights are 1' above each of these. I have attached the file. 3' overhangs all around. I am having trouble joining the roofs when attempting it as multiple roofs because of the complexity of the wall geometry. Any help appreciated. Thanks again!
