I would like to tunnel a skylight through a pitched roof/ceiling like I show in this image I am attaching. What is the best way to achieve this?

It looks like you already have the skylight in there penetrating the roof, but you will have to define what the rest of the design intent is. So, I would say the best approach would be to model it how it is going to be built.  So, you will need the void in the ceiling (either editing the ceiling footprint, or adding an in-place ceiling void family), and then you will need to model the 4 walls around the opening, which will go from the ceiling to the roof penetration.

If you cut a section through it, you should have all the major elements that would be required to show that detail.
