I am new to Revit and have just started the most basic work. One item I need to know how to create is a Door & Frame for a toilet enclosure where the door itself is a 2' x 5' door that sits 12" a.f.f. in a 7' frame. (12" open top & bottom). I have several of these in the project with a 3' wide one for the handicap stall. Any guidance would be greatly appreciated.

You may need to upload the family you are using so the correct answer can be given.
The size is usually controlled by the type parameters of the family. So you can select "Edit Type" on the properties palette and then duplicate the type and change the parameters controlling the door size.
Attached is a quick one from OOTB template, Revit 2015. Open it and look at Floor Plan and Elevation to see how things are constrained. Let me know if you have questions at any parts.
