So Plans and Ceiling Plans have the default detail number and sheet number, but the Elevations and Sections have the detail number and then the referencing sheet number.
My current work around is to change elevations and sections manually but this can be time consuming and risks missing views.
I'm pretty sure you cant set different Viewport Titles for different View Types by default, but you can change them manually. In my office the default view title is set to None, which forces the user to pick a view title for the view there placing.
also, using the Title On Sheet view parameter will allow you name them differently than the "View Name" in the project browser. allowing for shorter named in the Project Browser and more descriptive names in the Title.

I agree with @hmunsell that it is not possible to control the default in Revit. We have implemented this feature for Revit 2020+ in IdeateApps>SheetManager: https://support.ideatesoftware.com/support/help/ideate-apps/ideate-sheet-and-view-tools/ideate-sheet...
