Why are ceiling creation tools so limited? I can make a roof by extrusion, a roof by face, or a roof by footprint but I only have 1 option for creating a ceiling. Ceilings have the ability to be complex just like roofs and I should have the ability to create them just like a create a roof. Model-in-place ceilings work but walls don't attach to them....so they really don't work. I think in the next version of Revit, make ceiling creation tools just like you create roofs. Floors and roofs have grips, give me grips on a ceiling.

What exactly are you trying to do? If you provided some information beyond just ranting, we could probably help you figure it out.
I'm sorry if it came off as ranting, that wasn't my intention. We are a laser scanning company and we find in a lot of buildings that ceilings are not just cookie-cutter flat or sloping in 1 direction or another. The architects create them with complex shapes and in many cases with multiple slopes that you can only make using a model-in-place ceiling. It was just a thought I had that it would be nice to make ceiling creation as user-friendly as creating a roof. Give similar options. That's it.
Your right, but it's still part of the roof family and when turning families on and off it will go with the roof. I am just trying to make a suggestion for future. If it doesn't happen then it doesn't happen.
I use for such type of Ceilings - a Roof by Footprint > Slopped Glazing without slopes that can be used as a Curtain Grid ...
