In the image above, I want one side of the roof to stop at the attic floor on the left side, but overhang on the exterior on the right side. Is there any way I can do this?

Yes, if I am understanding your question. You will just need to go into edit it, and modify where you want it to be.
There are different options
In sketch mode select one of the edges and give it an offset
Other option, Roof by face. Where you draw the profile of the roof.

Please mention Revit version, especially when uploading Revit files.
In this case, I sometimes define a Reference Plane in plan where the ridge is, then construct separate shed roofs sloping down from a common ridge height, using the roof arrow to control height and direction of slope. That way you can still define the roof shape in plan, and the two roofs can extend different distances without moving the ridge.
